Tasting Notes
This classic Merlot shows good barrel intergration on the bouquet, characters of berries and spices like cloves and herbal tones. Forthcoming on the nose is spicy oak and red berries. The wine is elegant, smooth with good tannins and great balance .
Ageing Potential
It is ready to drink now, or within 5 years.
About The Harvest
All grapes were hand picked and sorted twice before a pure yeast culture, B13, was inoculated.
In The Cellar
The juice was pumped over the skins 3-5 times per day for 5 days. Once fermentation was complete, the wine was drained of the primary lees and transferred to a resting tank. Malolactic fermentation and a brief settling period preceded the wine to a combination of 225 litre barrels of French oak.
