	                                   Tasting Notes
	                                   The Merlot 2009 is a selection of the ten best barrels of Merlot produced in that year. On the nose this wine is an explosion of dark fruit - prunes and blackberries with a slight caramelized sweetness. These flavours are repeated on the palate with some smoky tones complemented by well integrated oak. 	                                   About The Harvest
	                                   All grapes were hand picked and sorted twice before a pure yeast culture, B13, was inoculated. 
                                  
 
  
                                  
	
                                      
	                                   In The Cellar
	                                   The juice was pumped over the skins 3-5 times per day for 5 days. Once fermentation was complete, the wine was drained of the primary lees and transferred to a resting tank. Malolactic fermentation and a brief settling period preceded the wine to a combination of 225 litre barrels of French oak.
