Tasting Notes
The Pinotage has a intense, clean purple colour; aromas of red cherries with a explosion of spices backed by oak, bouquet well carry trough on the palate. A medium body wine with well balance between acidity and tannins.
Ageing Potential
The fruit and wood flavours are well integrated, making it a ready to drink wine now but delicious in five years.
About The Harvest
All grapes were hand picked.
In The Cellar
The grapes were sorted before a pure yeast culture, BM 45, was inoculated. The juice was pumped over the skins 3-5 times per day for 5 days. Once fermentation was complete, the wine was drained of the primary lees and transferred to a resting tank. Malolactic fermentation and a brief settling period preceded the wine to a combination of 225 litre of French oak for 12 months.
