Tasting Notes
Appearance: Clear, lime green in colour.
Wine Style: Dry.
Bouquet and Palate: This Sauvignon Blanc is sourced from 3 different slopes and locations on our farm, giving the wine a complex character. Light clear colour, aromas of tropical fruit (kumquats and gooseberries) with a hint of linden. The same fruit character follows through on the palate with a soft acidity and a lingering green finish.
Food Suggestions
Served well chilled, this wine is well suited to any seafood and cold meats. Also delightful on its own!
In The Vineyard
Wine-growing Area: Klein River Ward, Western Cape, South Africa
About The Harvest
All grapes were hand picked and sorted before being crushed directly in to the press were skin contact is allowed for 8 hours.
In The Cellar
Pure yeast cultures were inoculated in the juice after pressing in order to optimize the fermentation process at around 16 degrees celsius. Extended lees contact was allowed after fermentation and the wine was allowed to naturally clarify itself under gravity prior to filtering and bottling.
